Usage
It has other interesting uses apart from Bharta. Cook it like you do for bharta and then mix it with a tadka of mustard seed, green chilies and a pinch of hing and add a half a lemon juice/ curd. Apply garlic marinade on the slices of the eggplant and bake or grill in the oven. There are delicious Chinese recipes too.
