Lady's fingers is an alternative English name for okra, the mucilaginous seed pods of a plant of the hollyhock family. Though classified as a fruit, Okra has often been utilized as a vegetable, both on its own and with other vegetables and ingredients. Cutting and cooking okra in moisture will create a sticky juice that increases the thickness of soups and stews. Dried okra can also thicken sauces. It is sometimes used as an egg white substitute to increase richness of flavor.

Usage
Stir-fry with diced chilli peppers, diced and fried with tomato and onion as side dish for roti/rice and dal. Deep fried as chips for snacks, sautéed and added to sambhars, diced, deep-fried and mixed with curd. Masala bhindi and tava fry are all very popular dishes.
