Cyamopsis tetragonoloba is scientific name for cluster beans and is locally known as guar phali, kottavarangai, kottaavarakkai, gorikkai, goruchikkudu, gauvari, guara di phalli, jahar sim, and govar in various parts of India.
Usage
Cooked as a side dish with potatoes, mixed vegetables and daal that is generally eaten with Indian chapatti/roti or rice. It is also made as stir fry. Tender ones can be sautéed in some olive oil with a bit of salt and black pepper. The gum in cluster beans is used in ice creams, bakery products and also as a stabilizer in cheese and cold meat processing.
