The young and terder Rucola or Rocket leaves are sweet and have a nutty flavor and best eaten raw in this stage. As the start to mature they develop a spicy to bitter taste. They have a unique fragrance and the leaves are beautiful in appearance.

Diplotaxis tenuifolia is the scientific name for Rucola. They are also known as "Rocket leaves". In Hindi it is called Taramira.
Usage
Rucola is often found in mixed green salads, but it is also a delicious pizza topping. It has a unique rich, peppery taste that elevates any dish it is added to. Cooking Tip: Toss fresh rucola, bell peppers, beetroots with olive oil in a pan for a fresh, warm salad.
