Val Papadi is a flat white bean covered in a green pouch-like structure, with a bland and slightly bitter taste. Val Papadi is a member of the same family as beans, peas and legumes. It is native to the tropical regions of Asia and Africa. Papdi beans contain iron, magnesium, and calcium.
To store for a longer period wash the Val Papdi thoroughly under warm water, chop into desired size pieces and store in a breathable muslin cloth or a cotton bag and refrigerate them in the vegetable drawer.

Usage
Goan-style val papadi cooked in tamarind paste, mustard seeds, fresh coconut, garlic and chillies is a must try. Val Papadi can also be made with dal and coconut scarpings as a dry thoran or a kuttu that can be eaten with rice or chapati.
